Cantizano Sauces and Preserves

Cantizano Sauces and Preserves is a small family with two very specific passions, cooking and the countryside. They grow themselves the ingredients used to produce their delicious sauces and preserves. Some of the ingredients they currently use to elaborate their products are piquillo peppers, tomatoes, garlic, onions, tagarninas, greens or artichokes.

The family is original from Paterna de Rivera,  a small village located in the center of the province of Cádiz. Paterna is part of the ´Ruta del Toro´and is between the ´Parque Natural de los Alcornocales´and the ´Vega del Guadalete´.

All their products are homemade, cooked without any artificial colourants or flavorings. They produce nine different sauces and preserves at the moment, but they continuo looking for new posibilites and traditional recipes.

Picarnina

It is an unique and very tasty paste made with tagarninas, bread, garlic, peppers, vinegar, extra virgin olive oil, spices and salt. It can be enjoyed cold as a paté just with a piece of bread. It is also delicious with fish, meat or pasta.

Picárragos

It is a delicious paste made from asparagus, bread, garlic, peppers, vinegar, extra virgin olive oil, spices and salt. It is based on the same recipe as Picarnina, but it has an unique flavour.

Piquillo Peppers

This amazing preserve is produced from Cantizano´s home-grown peppers and Cadiz´s extra virgin olive oil. They are just a perfect option when eating fish, grilled meat, or red tuna of almadraba.

Tomato Puree

It is a traditional ingredient on the Mediterranean diet. It is made with garlic, onions, peppers, tomatoes, extra virgin olive oil and salt.  It is a perfect option when eating pasta, or just with a couple of fresh eggs.

Spiced Tomato Puree

It is based on the same recipe as their tomato puree, but with the addition of some traditional Andalusian spices, such as pepper, cumin or coriander.

Tagarninas

Tagarninas are a natural wild plant used in many tradicional Gaditanian dishes. Cantizano´s tagarninas are cooked with garlic, Spanish iberian ham, extra virgin olive oil and salt. They can be added to omelette, meat or vegetable stew, or be eating as a garnish, with meat, fish, pasta or rice.

Wild Artichoke Hearts

They can be eaten in many different ways: with Cantizano´s fantastic Tomato Purees, grilles with garlic, parsley, extra virgin oil, salt and pepper, they can be added to stews, rice (paella), or just straight from the jar with a bit of homemade mayonnaise.

Cardillos

They are a type of wild plant found in Cádiz and used in traditional cooking. They are an important ingredient when cooking the traditional Gaditanian ´Berza´, and Andalusian dish made with mainly vegetable.

Country Sauce

Cantizano´s country sauce contains tomato, garlic, onions, peppers, bread, vinegar, extra virgin olive oil, salt and pepper. It is a great option when cooking homemade pasta or pizza, rice, on just on a toast.
